grilled asparagus and creamy lemon quinoa!

hello friends!! hope you're all faring well in this insufferable summer heat (and doing what i do by staying indoors and watching netflix aha just kidding...kinda) anyway today i wanted to share one of my new favorite summer recipes with you :~) something that's delicious, healthy, and super easy to make. i got the inspiration to make this meal from greenkitchenstories {recipe} so all credit definitely goes to the owner(s) of that blog!!

ingredients (serves 2)
  • 1/4 cup white OR whole-grain quinoa (i used whole-grain bc i'm tryna be a better person)
  • however many stalks of asparagus you want (i used 6 but it was a little much for me)
  • 1/2 tbsp olive oil
  • 1/4 cup red bell peppers (cut into bite size pieces and grill for a bit!)
  • 1/4 cup feta cheese
  • a dash of coriander OR parsley (i used coriander!)

dressing ingredients
  • 1 tbsp olive oil
  • 1/2 tsp soy sauce
  • 1/4 tsp cumin seeds
  • juice of 1 lemon wedge

how to prepare

i just cooked the quinoa in our rice cooker but if you don't own a rice cooker, just follow the instructions on your package! usually they'll just tell you cook it in a saucepan on the stove with water. do this first, and set the quinoa aside to cool!

next, make the dressing. whisk the olive oil, soy sauce, and lemon juice together first, and then add the cumin. you may either have the cumin already ground into a powder (like my family does...because us indians use cumin for all things) or as seeds. either way, make sure the end result is a ground powder!!

for grilling the asparagus, you can either use a charcoal grill or a simple griddle pan over high heat. rinse and dry the asparagus, drizzle the olive oil on top, and season with salt. grill and turn as needed (mine took 5 minutes to get fully cooked)

while that's happening, you can get a bowl and throw the quinoa, dressing, feta cheese, and bell peppers together and mix well. i didn't actually grill my bell peppers, but they still tasted good!! arrange your asparagus on a plate and top with the quinoa. add the coriander leaves, and you're all set!
